With temperatures reaching into the upper 80’s this week the need for light, simple, and healthy summer meals becomes a necessity. Standing over a hot stove or opening a hot oven becomes less appealing the hotter it gets.
This lovely salad came courtesy of Skinnytaste and I originally posted it back in July 2013. I recently remade this delight and thought it was time to re share. This simple summer salad can be made in small or large portions and is the perfect accompaniment to grilled chicken or fish. Summer in a bowl.
Watermelon Cucumber Feta Salad (Recipe courtesy of Skinnytaste)
4 cups chilled seedless watermelon, diced large
1 medium chilled English cucumber, peeled and diced
1/4 cup kalamata olives, pitted and sliced
1/4 cup (1 oz) crumbled feta
1 tablespoon fresh mint (or basil) leaves, thinly sliced
3 tablespoons balsamic vinegar and olive oil
Divide the watermelon and cucumbers equally between 4 plates or in one large serving bowl; top with olives, feta and mint. Drizzle the balsamic glaze over everything when ready to serve.
