Chili Cheese Sticks A.k.a. Dynamite Sticks

Good day darlings :) I'm sorry if I haven't posted the past few days.  I have been so busy lately with no internet access to post new entries.  Today, I am sharing yet another favorite recipe that's perfect pulutan (appetizer).  I made this a couple of weeks back and boy, was it yummy.  I have seen this recipe so many times but I decided to make the the "jumbo" version.  I hope you like this super simple, super easy recipe that you can prepare for your friends and family.
For this dish, we will need the following ingredients:
1.  Lumpia wrapper (spring roll wrapper)
2.  Siling pansigang/siling haba (green chilis)
3.  Cooked ham
4.  Cheddar cheeseFirst thing to do is to prep the ingredients.  Wash your chilis.  Cut them lengthwise then remove all seeds and white meat inside.  If you want super hot cheese sticks, you can leave a few seeds inside.  Slice the the cheese into sticks then also slice your ham to about the 1/4 inch thick and about the length of your chilis.Next, get your lumpia wrapper.  Place the sliced cheese, ham, and chili to one end of the wrapper.  Stack the three ingredients nicely.Next, roll the wrapper until all three ingredients are covered, fold both ends so that the ingredients are secured inside then roll until you reach the other end of the wrapper. Repeat this step until you rolled all your green chilis.  See how big I made mine?  Usually they are only about the size of your finger but because I bought extra long green chilis, I have made super sized dynamites :)In a pan, put your usual cooking oil then fry the cheese sticks until golden brown.  Make sure to place the side where the wrapper ends so that the cheese sticks does not unfold while cooking.  Drain excess oil in a paper towel.Serve these super yummy sticks while they are hot and crispy together with your favorite ice-cold beer.I love the balance of flavors and the different textures with the hotness from the chilis, the gooey cheesy goodness and delicious ham with the super crispy outside.I do hope you enjoy today's recipe :)
