Chicken Bharta

Did it ever happen to anyone other than me that you are totally out of ideas to cook food? Well..it did happen today...I didn't know what to cook...was running low on energy and ideas...specially ideas. Didn't have slightest clue what is going to be my dinner...so I started surfing and found this wonderful recipe of Chicken Bharta.

I had never heard of chicken bharta till now...I knew traditional Brinjal Bharta.
Original recipe credit goes to Kanchan Shaw. I stumbled on this recipe and thought of giving it a try ...did some modifications to suit my taste buds and turned out good...super easy and quick.

Well, the taste turned out to be good and more of butter chicken kind ...I think if you make this recipe on a gravy side it will be more or less butter chicken. :)
Also, I realized it tasted super yumm on next day...this kind of logic or saying goes with Goan Chicken Xacuti...it always tastes good on next day..don't know why :) but it sure does!!!

Why I am wasting time to do all this chitter-chatter rather than concentrate on the recipe???

Ingredients:

  • 250 gms of Minced Chicken or Shredded
  • 4 Cloves
  • 4 Black Peppercorns
  • 1 Inch Cinnamon Stick, crushed
  • 1 Black Elaichi/Cardamom
  • 2- Green Cardamoms
  • 2 Bay Leaves
  • 1 Tsp crushed Kasoori Methi
  • 1 Large Chopped Onion
  • 1 Tbsp Ginger-Garlic Paste
  • 1/4 Tsp Turmeric Powder
  • 1 Tsp Red Chili Powder
  • 2 Tsp Coriander Powder
  • 2 Tsp Cumin Powder
  • 2 Tsp Tomato Puree or pulp
  • 8 Cashews Soaked in 1/4 Cup Warm milk, later ground to a paste or use fresh cream
  • 2 Tbsp Butter (for frying) + 1 Tbsp Butter
  • Salt as per taste
  • 1/4 Tsp Sugar
  • 1 Tsp Garam Masala Powder

For Garnish:
  • Chopped Cilantro
  • Chopped Onion rings
  • Lemon Wedges
  • Boiled Egg Wedges - Optional


Method:

  • In a pan add 2 Tbsp butter, when its slightly hot, add cardamoms, cinnamon,cloves,bay leaves,peppercorns and fry for a minute.
  • Add ginger-garlic paste and fry for 1 min.
  • Add onion to the whole garam masala and fry till its pink in color.
  • Add all dry spice powders and saute for a minute.
  • Add chicken and saute for 2 mins. To this add kasoori methi.
  • Add tomato puree to this and cook for another 2 mins.
  • Add salt and sugar and adjust the taste. Cook till chicken is done.
  • Lastly, add cashew paste. Cook for 1 min. Add 1 Tbsp Butter on top of it.
  • Turn off gas and garnish with onion,cilantro,egg wedges and lemon.
  • Serve hot with chapatis or naan.


Tips:

    If you want add a little water to cook chicken but,better not to add it initially as chicken itself will leave water.
