Chewy, Low Calorie, Jumbo Granola Bars

I have a love/hate relationship with making granola bars over the years. Invariably I will find a recipe for a super awesome homemade granola bar – I will follow the recipe to a T – bake the bars – let them cool and then try to cut them into bars and it all falls apart apart and now I have granola. Now don’t get me wrong – I LOVE granola – but when I have my heart set on actual bars – that’s what I want! Even though I’ve had many fails, I still try again.

My recipe is loosely based on THIS recipe from Eat Your Greens. I customized it with what I had on hand and what I thought would taste good.

The batter will be kind of wet – that’s OK. My advice is when you put the batter into the pan, press down as hard as you can all over.

I made this recipe into 6 GENEROUS sized bars. The calories came in pretty good too!

How did these turn out? I LOVED them!! I did an experiment and had one for breakfast this morning and it kept me full all morning. I love that!
