5oz Sultanas
5oz Mixed Dried Fruit
3oz Apricots
2oz glacé cherries
1oz cranberries
1oz candied peel
2Tbsp Cherry Brandy
4oz Flour
1/4 Nutmeg
1/4 Ground Spice
4oz Margarine
4oz Dark Brown Sugar
2 Eggs
1oz Almonds
1/2 Tbsp Black Treacle
1/2 orange rind
1/2 lemon rind
Add the dried fruits into a bowl and mix together.
Pour in the Cherry Brandy and stir. Leave to soak over night.
In a mixing bowl add flour, nutmeg, ground spice, margarine, dark brown sugar, eggs, chopped mixed nuts, black treacle, orange rind and lemon rind
Mix on medium speed for about 1-2 minutes.
Stir in brandy soaked mixed fruit
In a double lined 6inch baking tin add the batter.
Cut out a circle baking sheet and place loosely over the top of the cake
Bake in the oven at 150c for about 3 hours and 30 minutes and then allow to cool completely.
After 2 days prick the cake with a cake taster or knife.
Drizzle over about a 1-2 tbsp of cherry brandy. Now once to twice a week feed the cake 1 tbsp of brandy, I will alternate between cherry brandy and plain brandy until about a week before christmas where I will ice the cake.
