Thanksgiving is just around the corner and you know what that means: DELICIOUS food!!! I love to cook for my family for Thanksgiving. I have been doing all our Thanksgiving cooking since I was about 16 years old. Thanksgiving is a marathon cooking event for me. It takes weeks of meal planning, prep, baking and then cooking. Let me tell you, cooking for 20+ people every year is exhausting but so worth it! I have to make a HUGE turkey, lots of potatoes and many, many pies. Everyone has a different request and I try to accommodate all requests. Adrian likes pumpkin pie, my brother likes pecan pie, my nephew eats apple anything and JC always asks for green bean casserole. Green bean casserole is a staple at many a Thanksgiving table but honestly, I get tired of making the same old casserole every year. Last year I added bacon to it and this year, I want to make Cheesy Green Bean Casserole. JC loves cheese on everything. I wanted to do a practice run so I’m not lost on Thanksgiving so this week, I made Cheesy Green Bean Casserole and it was so easy!Ingredients (serves 6)1 can Del Monte® green beans (drained)1 can Campbell’s® Condensed Cream of Mushroom Soup1 pkg fillo doughBlack pepperFrench’s® French Fried OnionsMozzarella cheeseHeat oven to 350 degrees and grease a muffin tin.Add 1 sheet of fillo dough, folded into quarters, into each hole in muffin tin.In a medium bowl, add green beans, cream of mushroom soup and black pepper. Mix until combined.Scoop mixture evenly among dough. Sprinkle with French fried onions and then mozzarella cheese.Bake at 350 degrees for about 20-25 minutes or until bubbly.Set aside to cool. When you are ready to serve, scoop out each dough cup with a spoon to maintain the shape.Serve warm.  JC loved our trial run of Thanksgiving sides. Now to work on table settings!
