chana masala recipe - easy to make chana masala
chana masala - chickpeas curry ,i think this is my 2nd version and i tried this one without ginger garlic paste ie., this is a no garlic recipe.For me this makes magic in all gravy based recipes but without it what we can do?made this in pressure cooker and it tastes fantastic and no one can find there is no gg paste in it.Another interesting thing is that i did not used tomato too here in the recipe.
Soak the chickpeas overnight or soak it in recently boiled water in a vessel for 1 hour before proceeding.the recipe seems so mild and a quick version for chole masala.I added freshly added garam masala,yes that day i made a new batch of aromatic masala and i added it the recipe.
As usual,you need two textures of onions in the recipe,one for making paste and another which is finely chopped to add the texture to the gravy.The paste which makes the masala rich is made with ginger,onion and almonds ,there i used some leftover almonds after making some sweets.

easy chickpeas curry made with onion and spices
- chickpeas/kabuli chana - 1 cup,soaked overnight
- onion - 4 nos
- ginger - 1/4 inch piece
- turmeric powder- 1/4 teaspoon
- garam masala - 1 teaspoon
- red chilli powder - 1 teaspoon
- cumin powder -1/4 teaspoon
- almonds - 4 nos
- bay leaf,cinnamon,cardamom,cloves,cumin seeds - for temper
- oil - as needed
- salt -to taste
- coriander leaves - as needed
- Pressure cook the chickpeas with enough water and salt in the pressure cooker upto 4 whistles and switch off the flame.
- Meanwhile heat oil in a kadai,add 3 roughly chopped onions,ginger along with almonds and saute it well till onions cooked well.Make a paste with that in the blender.
- Once the pressure released,collect the chickpeas along with water in a separate bowl.
- In the same pressure pan,add oil and add the ingredients given for tempering.
- Now add 1 finely chopped onion to it and saute it till it becomes brown and then add the onion paste and saute it till oil separates.
- Add turmeric powder,red chilli powder,cumin powder and garam masala to it and mix it well.
- Add water and enough salt for this masala and wait till it comes to boiling state.
- Add chickpeas along with water and give a quick mix.Cover it with the lid and again pressure cook it for 3 more whistles.
- Switch off the stove once it get ready.Open the lid and add coriander leaves and serve.
