Chai Tea Pineapple Upside-Down Cake

Yes, this is another tea recipe, but once you’ve tried this easy version of pineapple upside-down cake you will never want any other cake recipe.  This cake is so delicious and its even better the next day.  The combination of pineapple and chai tea makes this cake pop.  Serve this with banana ice cream for a truly amazing combination.

CHAI TEA PINEAPPLE UPSIDE-DOWN CAKE

Ingredients

Cake

  • 1 1/2 cups all purpose flour
  • 3/4 cup brown sugar
  • 1 tbsp corn flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp white vinegar
  • 1 tbsp vanilla essence
  • 1/4 cup sunflower oil
  • 1 cup chai tea

Pineapple top

  • 1/2 cup brown sugar
  • 1/2  cup margarine
  • 1 medium pineapple, peeled, cored and cut into rings

Directions

Preheat oven to 350F/ 180C.

In a large bowl combine the flour, sugar, salt, cornstarch, baking powder and baking soda.  Pour in the vinegar, vanilla, oil and chai tea, stir until well combined.

Spread the margarine on a cake pan and sprinkle it with remaining sugar. Arrange the pineapple over the sugar.

Pour the batter over the pineapple and bake for 40 -45 minutes or until golden brown and a toothpick comes out clean.

Remove from oven and let sit for 15 minutes. Flip the cake out on a plate and remove pan.  Serve.
