Cauliflower Chopped Salad with Croutons and Bacon Bits

When I buy a head of cauliflower, this snowy white vegetable sits in the crisper, completely neglected, until it turns a lovely shade of brown.

After I toss it in the compost bin, I vow never to make the same mistake again. I’m sure you can guess what happens the next time cauliflower lands in my grocery cart!

You’ll find a handful of cauliflower recipes on this blog like these cheesy tots, and inventive rice alternative. But considering I’ve shared more than 1000 recipes during the past five years, this is a pitiful offering.

But I’m turning over a new leaf. Cauliflower here I come!

I’m starting with a chopped salad that combines what’s left of my garden’s zucchini, yellow squash and cucumber with those delicate white florets. Then I’ll add crusty croutons, olives, and a sprinkle of smoky bacon to finish off my cauliflower salad. A light garlicky vinaigrette binds it all together.

No more neglected cauliflower. This good for me vegetable has a new lease on life in this house!

Shake it Up!

I’m a fan of chopped salads because you can swap any firm vegetable you have in the vegetable bin to create a bright and refreshing meal. Leftover proteins like chicken or boiled eggs can make this salad even heartier.

Print Cauliflower Chopped Salad with Croutons and Bacon Bits

Ingredients

  • 1 cup cauliflower , chopped
  • 1 cup yellow squash, chopped
  • 1 cup mushrooms, chopped
  • 1 cup cucumbers, seeded and chopped
  • ½ cup green onion, thinly sliced
  • 2 tablespoons bacon bits
  • 1 cup croutons
  • 3 teaspoons garlic, minced
  • 3 tablespoons olive oil
  • 2 ½ tablespoons red wine vinegar
  • 1 teaspoon honey

Instructions

  1. Combine garlic, olive oil, vinegar and honey in a bowl
  2. Combine vegetables, croutons and bacon bits in a large bowl with dressing, and toss to combine.
  3. Chill for 15 minutes to combine flavors.
