Carrot Whole Wheat Salted Cookies

Salted cookies(uppu biscuits) those available in the local bakeries here are my favorite.They are just melt in mouth kind and have a very delicate crumbly texture.Ever since I got an OTG I have been experimenting on baking with few success and few failures.I have been wanting to try these salted cookies for a long time and finally made them.As usual I made some modifications to make it more healthy so as my daughter could eat them.I used whole wheat flour instead of maida and added some grated carrots to the dough.These cookies were so tasty,crispy and had the same melt in mouth texture.I was really happy and satisfied with these cookies.It is a very nice change from all those sweet dough cookies and even those who are not very fond of normal cookies would love these.I hope yo will give a try n enjoy :)
Carrot whole wheat salted cookies
Star ingredient: Carrot,whole wheat flour
Time:10+20 minutes
Yield:20 cookies
Ingredients:
150 grams whole wheat flour
50 grams chilled butter
1 carrot(small) peeled and grated
1/2 teaspoon carom seeds (omam)
1/2 teaspoon pepper powder
1/2 teaspoon cumin powder
1 teaspoon baking powder
1/2 teaspoon sugar

Method:
1.Take all the ingredients except butter and carrot in a bowl.Mix well.Add the chilled butter cubes and grated carrot to the dry flour mixture and rub with your finger tips,until the mixture turns crumbly and all the butter is melted.
2.Add up to 1/4 cup of water to the mixture slowly and bring together.Start kneading gently and form a dough.Refrigerate for 15-20 minutes.Roll the dough to a thick circle and cut out into diamond shaped cookies as shown in the picture.
3.Preheat oven at 200C and grease and dust a baking sheet.Arrange the cookies in the baking sheet and bake for 20 minutes or until the top turns light brown in color.
4.Allow the cookies to cool completely before storing.

Notes:
1.It is important to refrigerate the dough to harden the butter.Else it will be difficult to roll the dough.
2.You can use maida instead of whole wheat flour if needed.
3.Instead of pepper powder you can add chilli powder and add any kind of dried herbs to give a different flavor to the cookies.
