Caramelised Onion & Cranberry Sausage Rolls

Christmas is fast approaching now and I expect lots of people are beginning to feel the pressure of all the things that brings – shopping, presents, baking, party hosting etc! Well if you’re looking for a super quick recipe for some party food with a universal appeal to young and old this recipe for Caramelised Onion and Cranberry Sausage Rolls should fit the brief.

Now as much as we might like too, there’s rarely time to make everything from scratch, so thats where The Co-op come in – ready made puff pastry, good quality pork sausages, cranberry sauce and delicious sticky caramelised onion jam are already at your fingertips.

These can be eaten hot straight out the oven, or cooled and then eaten a few days later so they are great for making in advance too.

Caramelised Onion & Cranberry Sausage Rolls (Makes 15 -20 bitesized rolls)

Ingredients:

  • 1 sheet ready made puff pastry
  • 6 pork sausages
  • 3 tbsp cranberry sauce
  • 1 tsp chopped fresh sage
  • 3 tbsp caramelised onion jam
  • 1 egg (for eggwash)

Method:

Step 1: First remove the skins from the sausages and drop the meat in a large bowl. Add to this the cranberry sauce and sage, get your hands in a mix well. (Then wash hands thoroughly)

Step 2: Lie your sheet of pastry on a tabletop and cut into 3, horizontally. Egg wash the surface of each (so that they stick together well when rolling later)

Step 3: Take 1/3 of the sausage meat roll into a sausage shape and place along one long edge of the pastry. Top with 1/3 of the onion jam (see below) Repeat twice more with the other pieces of pastry.

Step 4: Roll tightly, making sure all the stuffing is enclosed. Pinch together the ends of the roll, brush with more egg wash then prick the top with a fork several times so steam can escape.

Step 5: Bake for 30 mins in the oven at 180 degrees until golden brown. Portion as wished.
