this is such a lovely kheer and i want to try once i saw in few blogs here and now am here with my own version and prepared this last weekend.It came out really well and adding butter in the recipe is optional and if you do not want to add butter in payasam recipe,avoid it and make as usual.I did not added ghee or clarified butter in the recipe as we roast the dry fruits and nuts in the usual payasam recipes.Vishu/Tamil New year coming so you can expect more and more payasam recipes along with some sweets here,so stay tuned.

I served this kheer little chilled as summer is in peak,so i served this one chilled.V told this is good but too sweet for him.Yeah it is little sweet when i made this one ,so i provided enough sugar in the ingredient.I just added extra sugar in milk forgetting the addition of condensed milk.So you too be cautious in adding sugar in milk.Without ghee roasted dry nuts,adding as it is makes healthy one as well make it richer too.lets move on making the recipe.,

Ingredients

  • sugar - 2 tablespoon
  • milk - 250ml
  • condensed milk - 1 to 2 teaspoon
  • dry fruits - chopped roughly
  • cardamom powder - 1/4 teaspoon
  • saffron - as needed(optional)
  • Butter - 1 teaspoon(optional)
Instructions
  1. Boil the milk in a sauce pan and once it comes to boil add 1 teaspoon of sugar and saffron strands to it and mix it well.
  2. Add 2 teaspoon of condensed milk to the boiling milk and keep on stirring.switch off the flame and keep it ready.
  3. Meanwhile take remaining sugar with a teaspoon of water and in low flame melt it.Wait till it starts to change the color and once it attains amber color add 1 teaspoon of butter to it and keep on mixing.
  4. Then gently add the boiled milk in low flame and be careful in adding this and keep on stirring simultaneously.Not to worry if the caramel particles forming while stirring.It will dissolve after few seconds.
  5. Finally add cardamom powder and chopped dry fruits and nuts and cook it for few seconds and switch off the flame.
  6. Serve warm or chilled.For this season serve chilled.
