Calzone Pocket (Pizza Pocket)

Has anyone of you tried a calzone pocket available in most pizza joints. I have seen this on menu in dominos many times but somehow never tried there because I was not sure what to except. Once I read somewhere a calzone pocket is just like a stuffed and folded pizza,so I thought of trying it at home with my usual pizza dough.I just referred wiki and got an idea before attempting and this calzone pocket turned out to be one of best trial in the recent days.It is a very easy dish to put together but turns put to so very spongy and well textured bread filled with any veggies of your choice with or with out cheese.I of course loaded mine with cheese :). Try this recipe with your favorite pizza dough or just with this recipe and you are gonna love it.The filling I have used here is a very basic quick stir fry of my favorite veggies and you can totally be creative with filling.I would describe this more as a method of making calzone rather than calling a recipe,lets dig in :)
 

Calzone pocket recipe
Star ingredients:Basic pizza dough and filling
Time:20 minutes+20 minutes+making and resting the pizza dough
Yield:4 large calzone pockets

Ingredients:
Pizza dough with measurements given here
1/2 cup grated cheese (optional)
Mixed Italian herbs
Chilli flakes
For the filling
1 carrot peeled and chopped
1/2 cup sweet corn kernels
1/2 cup bell pepper chopped (any color)
1 large onion sliced thin
2 tomatoes chopped fine
1 teaspoon sugar
1 teaspoon chilli flakes
1 teaspoon dried basil
2 tablespoons oil

Method:
For filling:
1.Heat 2 tablespoons oil in a kadai. Add onions and saute till translucent. Add the chopped tomatoes and sugar.Saute till tomatoes are cooked and mushy.
2.Now add all the veggies and saute well.Add 1/2 cup water and cook till water is absorbed and veggies are half cooked.Add salt,chilli flakes and mix well.
3.Once the filling is semi dry remove from flame,add basil and set aside.

Calzone pockets:
1.Take the raised pizza dough and punch back and knead well.Make 4 equal sized balls
2.Pre heat oven to 200C.Grease and dust a pizza plate or baking sheet.
3.Now roll a poton into a circle of about 7",thinner than a regular pizza base.
See those small specs in the rolled dough? I have added 1/2 teaspoon of dried herbs to the dough and it was kind of ok,I did not feel much difference in the dough though :)
4.Spread the filling in one half as shown in picture.Add grated cheese if using.
5.Close with other half,leaving the edges to seal.(see picture)
6.Now seal the edges and press with a fork. Transfer gently to the baking sheet
7.Bake for 18-20 minutes till the top turns golden brown.Serve hot.
Notes:
1.If you find it difficult to transfer the shaped calzone to the baking sheet,transfer the rolled out circle to the baking sheet and do the shaping part there.I used both my pizza plate and baking sheet to make 4 calzones at the same time.
2.Use olive oil or any other odorless oil
3.You can make small or large calzones as you prefer.
