Cabbage and Bacon: A Comfort Food

Looking for a new comfort food that’s full of vegetables?  Cabbage and Bacon is here!  I must admit that we rarely eat cabbage, outside of cole slaw or the traditional corned beef and cabbage for St. Patrick’s Day.  I know some folks use cabbage soup to lose weight, or put a little red cabbage into their salads.

Cabbage?

We’ve been sending out Variety Boxes of fruits and veggies to folks who are staying home during the corona virus quarantine, and some who can’t leave their homes to shop.  One of those folks asked if we could send some cabbage.  Cabbage?  You really need cabbage?

Yes, she lives on an island with literally no produce market, and her husband is ill, and he just loves Cabbage and Bacon.  So we sent her a special box with cabbage and tangerines.  Love in a box!  Order Avocados, Tangerines, or Variety Box Here And I had to ask,  “Could you send me a recipe for Cabbage and Bacon?”  Could it really be that good? Cabbage and Bacon – So Good

I’m sorry to say that I had never heard of this delicious and healthful dish.  I know now that it’s a southern specialty, although my own mother who came from Mississippi never cooked it for us.  We had our green beans cooked with bacon, but never cabbage.

Start with a few pieces of bacon in the pot where you’ll cook the cabbage

Quick and Easy Cabbage and Bacon

All you need for this hot, filling comfort food is bacon, onions, garlic, cabbage, and maybe a chicken stock (or water).

Start by frying the bacon in the bottom of a deep saucepan or pot.  Remove the bacon when it’s crisp, pour off some of the fat, and saute the onions / garlic in the remaining bacon fat.   Slice up the cabbage, add it to the pot with 1/2 cup of water or chicken stock.   Season with salt, pepper, onion powder, paprika.  Cover the pot and simmer for 10-15 minutes on top of the stove.

Enjoy a bowl of this steaming hot yumminess!  It’s veggies!  And bacon! No guilt!
