Butter Cookies with Multigrain Flour
By Harini
I have never done so much thinking before.Ever since I have been feeding a growing toddler my brain is on thinking mode on what do I feed her today :). Of late my daughter has become so picky when it comes to eating and meal times are really getting dreadful. She is not yet quite ready to feed with complete adult food and the redundancy of dal and rice or idly doesn't seem to appeal her :)The sathu mavu(multi grain gruel powder) that I posted here some time back was one of her favorites which now has become a gross according to her.I really want to keep this powder in her diet as it full of nutrition from various whole grains and nuts.So I thought of making butter cookies using this flour instead of all purpose flour,as cookies or biscuits are her current favorites, may be it is easy for her to hold and munch on them as finger food.I had least hopes about these cookies as the multi grain flour is not fine as all purpose flour. But these cookies turned out awesome, full of flavor, texture and crunch.I would definitely say this is a winner recipe :)
Butter cookies
Star Ingredient-Multi grain flour,butter
Time-10+20 minutes
Yield-20
Ingredients:
1/2 cup multi grain powder (sathu mavu)
1/2 cup whole wheat flour
75 grams butter chilled
1/4 cup sugar
1 tablespoon badam feast (I used MTR) (Optional)
1 teaspoon baking powder
1/4 cup warm milk
A pinch of salt
Method:
1.In a large mixing bowl take multi grain powder, wheat flour, salt, sugar, baking powder and badam feast powder and mix well.Combine very well.
2.To that bowl add the butter cubes and mix using your finger tips.Incorporate the butter cubes to the flour mixture till the mixture resembles bread crumbs.
3.To this mixture add warm milk slowly and bring together to form a dough.Knead the dough for 5-7 minutes.Dough will be very soft and sticky.
5.Prepare a cookie sheet or baking tray by greasing and dusting with flour. Now divide the dough into 20 small sized balls and flatten it slightly.Arrange the cookies in the baking sheet .
4. Preheat oven at 200C for 10 minutes.Bake for about18-20 minutes till slightly browned. These will be chewy when hot but once cooled they become very crunchy.
Notes:
1.You can change the flavoring as per your taste.Vanilla or cardamom will also be great.
2.You can add a table spoon of cocoa powder for chocolate flavored cookies.
3.If you are baking this for older children you can add chopped roasted nuts to the dough.
4.If you are working on batches keep the dough refrigerated as the butter melts really fast.
