Bubba Shrimp

This is a really easy pasta/spaghetti recipe that is a huge hit whenever I cook it - prawns, bacon and vegetables in a creamy sauce. It looks and tastes like it took a huge amount of effort, when really this is one of the simplest things to cook. You will need...1 pack king prawns1 pack diced bacon (approx 3 rashers)1 onionFrozen (or fresh) spinach1 pepperCrème fraiche Garlic (fresh or puree)Vegetable stock cubeServes 2 hungry people, or three less hungry people!I try and look out for frozen king prawns when they're on offer in Sainsburys - which actually seems to be most of the time! I sometimes use a pack of diced bacon (if I have it), or alternatively just a few rashers chopped up. You can use as much or as little as you want. 
Start by chopping your onion, pepper and bacon and fry in a large pan. Your bacon wants to be slightly crispy if possible, so you may want to start with the onion and bacon first and add the peppers slightly later so they stay nice and chunky.Then, add a squeeze of garlic puree and 1 or 2 balls of frozen spinach. This stuff is great - one ball goes so far, so I often just use one. It is a great time and money saver, as are frozen chopped onions. If you are using fresh spinach, pop in about a handful - chopped or whole. Once your spinach has melted/wilted, cover the mixture with water and sprinkle over a vegetable stock cube. Leave to simmer for about 15 minutes, until the stock has reduced. You want to have some liquid left, but it should be a lot thicker. Turn down to a low heat (a low simmer) and add about two tablespoons of crème fraiche - stir until all mixed in. Now you want to add your king prawns. If they came frozen, make sure they are fully defrosted first. You can do this by leaving them in the fridge to thaw throughout the day, or alternatively I just pop them in a bowl with some warm (not hot) water and they defrost in minutes. Add the prawns to the pan and stir into the mixture. You don't want to leave these for long on the heat at all - if they are already cooked (look at the pack, they should be pink like mine) then it is just a case of heating them up - 2 minutes will be fine, any longer and they will shrink! If they are uncooked (grey and transparent), then you should cook them in the mixture on a low heat until they turn pink and opaque. 
Serve with spaghetti (or pasta) in warm bowls. We sometimes have this with garlic bread if we're feeling particularly hungry!Enjoy!
