I mostly make my breakfast at home and then eat it once I get to work. I do that for a few reasons. One is if I eat before I got to work, I’m starving by 10:00 – and 2nd, I am s.l.o.w. eater. No joke it can take me 30 minutes to finish something because I’ll take a bite, then do a little work, take a bite, etc…
I opened my freezer, saw frozen waffles – nah… I had leftover pancakes in there too – nah…. I didn’t feel like a sweet breakfast.
I did have Jennie-O turkey links in my fridge – so I grabbed 2 of those and this dish was born. In my fridge, I had more leftover quinoa, in my veggie drawer I had some red and yellow peppers and onions and I had exactly 2 eggs left – perfect!
This takes like 5 minutes to put together, so don’t think you don’t have time to make a deluxe breakfast, because you do!

So easy and delicious - I love varying my breakfasts and trying new things! This one is a keeper!
Ingredients
- 2 Jennie-O Turkey sausage links - defrosted
- 1 egg + 1 egg white
- 2 baby red peppers
- 1 green onion
- 1 tablespoon red onion
- salt and pepper to taste
- 3/4 cup cooked quinoa
Instructions
- To expedite things, I defrosted the turkey links.
- Chopped those up and threw them in a small skillet coated with Pam cooking spray.
- Cook on low for 2 minutes. Add the veggies (or whatever veggies you want) and cook that for another 2-3 minutes. Add the quinoa, and cook for another minute until heated through.
- Meanwhile, in a small bowl, I cooked the egg + egg white in the microwave until done. Chopped that up and added it to the skillet.
- Stir to combine.
It was a busy day yesterday. I worked all day – then went to my daughter Claire’s cross country meet – she did great – ran 1.5 miles.
After the meet, then we rushed home – ate dinner and headed to the high school for Open House. My husband and I split up and each took a son. Our kids are at the same high school my husband and I went to, so it’s always weird going back and walking the halls. (but fun!). I ran into some people I went to school with – and it turns out the gym teacher my son has – I had!!! (She’s just about to retire).
So a little over 2 hours was spent going to all my son’s classes and meeting his teachers -by the time we got home it was 9:30 – so it was a LONG day!
