Pizza Sauce.So that solves the calories issues,because the stuffing has lesser cheese,obviously.And I did a cheat check on him.I made the dough totally whole wheat.Whole wheat needs a little extra hydration. So if you try to convert an all purpose flour recipe to whole wheat,add a little extra water or milk and a couple of pinches of extra yeast. Oh and a spoon full of extra fat. No All purpose flour at all.Not needed.Bum.It did rise as much, but maybe it wasn't as pillow soft as the dough that has all purpose flour. But the taste and the beauty of the breads is above board.And now it's Healthy.And the dough is so beautifully pliable that I made bread cones and Rose shaped buns.Pretty?
Start with the dough. I used instant yeast for this. Fresh Bakers yeast was not available. Did you know that most brands of instant yeast are Chinese?
For the
Bread Cones, Rose Buns, Russian Chrysanthemum Bread with Pizza Stuffing -Whole Wheat
You need
4 cups flour2/3 cups warm milk1/2 cup yogurt 1 3/4 tsp instant yeast 2 tbsp sugar1 1/2 tsp salt1/3 cup plus 2 tsp extra neutral vegetable oil or olive oil- I use rice bran oil these days1 egg
1 cup Pizza sauce homemade or bottled
100 gms cheddar cheese grated
Pizza Seasoning to sprinkle
Milk /egg to wash the bread
Poppy seeds to sprinkle
Place the flour ,sugar and yeast in the bowl of the mixer. Mix a few seconds.I'm using a Kenwood Major stand mixer. A food processor or a manual dough maker or your bowl and God given hands will do. Add in the milk, yogurt,egg ,oil (-leave a spoon for the bowl)and salt. Knead to get a smooth elastic dough.Like so.
If you are kneading the dough by hand, make sure to knead atleast 10 minutes.
Once the dough is done ,tuck the loose ends under and form a ball. Place the dough ball in the remaining oil and set aside,covered to proof.
You'll be surprised as tp how well the dough rises.
Make your pizza sauce with onions,garlic,tomatoes and pizza seasoning.
I made the copy cat recipe for Dominos Pizza Seasoning... because I was mocked at by my boys every time I asked for extra sachets. So Oliver Twist like ,I took matters into my own hands. Read about it here and do make your own.
Allow the sauce to cool and add the cheese to it. Adjust the seasoning according to taste.Once the dough is done, punch it down and divide into two parts. We're going to roll and cut the dough many times so we dont need to knead it again.Cut one part into 6 parts. I have these cones that help make bread cones, if you dont have these,no issues. Just make paper cones and wrap in al foil. Make sure you lightly grease them.
Roll the cut dough parts into long ropes. Wrap the ropes around the cones using water to join the ropes. Place on a parchment sheet covered cookie cheet and allow to proof.
After approximately 45 minutes turn your oven to 180C and wait for 15 minutes.After 15 minutes,brush the bread cones with milk or beaten egg, sprinkle poppy seeds and pop in.20 minutes and they're done. Bring them out and in the Same baking tray , place the chrysanthemum bread and the Rose buds. Brush with milk and pop in.5 minutes and pull the cone off the bread cone.mthats why the cone was greased...
You can pipe the filling in too. Chop fresh vegetables and fill this cone to make a sandwich on the go. Maybe fill in a salad and enjoy a mess free meal. This is also great when boys are watching tv.
Just a little note about wheat. Wheat needs a little more liquid and oil. Gluten content in whole wheat flour is a little low...so the dough is not as pillow soft. But because this is a rich dough... The bread is soft.Just make sure you eat the bread within a day or two...whole wheat goes stale faster.
