Adapted with minor changes from 小小米桶的零油烟厨房cookbook, 高升排骨Ingredients:1kg pork ribs (about 4cm length cut)4 pips garlic4 slices ginger
~1234 sauce1 tablespoon cooking wine2 tablespoons black vinegar3 tablespoons sugar4 tablespoon soya sauce500ml water
Method:1. Bring a pot of water to boil. Put in ribs and blanch for about 5 minutes. Drain and wash with tap water till clean.
2. Put in clean ribs in cooking pot together with garlic, ginger slices, 1234 sauce and water. Cook over high heat. Once boiled, reduce to low heat, continue to braise for about 1 hour with lid on (check from time to time and stir the ribs).
3. Once the meat is fork tendered, turn on to high heat. Cook further with lid off to thicken the sauce. It takes about 15 minutes. Dish out and enjoy!
