What so you call a white chocolate brownie?! Yes that’s right – a Blondie!!
Ingredients:
140g Chocolate Chip Cookies
50g Butter
75g White Chocolate
60g Butter
75g Sugar
100g Flour
Pinch Salt
1 Egg
1 Tsp Vanilla
25 Chopped with Chocolate
100g Dark Chocolate
100g Milk Chocolate
Smarties
Place 140g of chocolate chip cookies into a blender or food processor blitz until crumb like texture.
Melt 50g of butter in the microwave and slowly pour into the cookie crumbs and mix together.
Press the cookie crumb mixture into a foil line dish or deep baking tray.
In a microwave proof bowl add the 60g of butter and 75g white chocolate and melt in the microwave for 30 seconds at a time until completely melted.
Into the melted chocolate add sugar and vanilla and beat together
Add egg, 100g plain flour and a pinch salt and mix together with a spoon until completely combined.
Stir in 25g of chopped white chocolate chunks into the batter.
Pour and spread over the cookie crumble base and bake in the oven for 25mins at 180c.
Allow to cool slightly, and melt 100g milk and 100g dark chocolate together in a microwave proof bowl at 30 seconds intervals unitl completely melted, pour onto the blondie.
Spread evenly over the Blondie evenly and sprinkle on some Smarties, place in the fridge overnight so the chocolate can set completely.
Remove from the dish or tray and slice with a sharp knife into small pieces.
