If you are searching for a cookie recipe, this is one you have to try! Hey, y’all and happy Blogmas Day 7! Today I want to share with you a recipe I PERFECTED this afternoon: Hot Chocolate Cookies.
I admit that when I first saw these cookies, I didn’t think much of them. I pinned the recipe and figured I would consider them eventually. This entire week I have tried a bunch of different cookie recipes for an upcoming Christmas Cookie Exchange and only two worked out well for me.
One of the two was shared on Blogmas Day 3 (Monday). The other is being shared today! Start and end the work week with some darn good cookies, right!? I LOVE this recipe and it is very simple to complete. Let’s get bakin’.
Ingredients
1 stick of butter (1/2 c)
12 oz of chocolate chips (2 c)
3 eggs
1 1/4 c of brown sugar (I used light instead of dark)
1-2 tsp vanilla extract
1 1/2 c flour
1 1/2 tbsp baking powder
1/4 tsp salt
1/4 c unsweetened cocoa powder
1 bag of large marshmallows (you won’t use them all, so save some for your actual hot chocolate)
Procedure
In a medium sized, microwave safe, bowl melt your butter and chocolate chips. Microwave for about a minute, stir, then pop the bowl back in for 15 second intervals until your chocolate is delightfully melted! Let it cool for a bit until you move on to the next step.
In a separate bowl, mix the brown sugar, vanilla, and eggs. I used a standing mixer, but a handheld will work just fine.
Add in your cooled, melted, chocolate to the mixture and beat slightly to mix the ingredients. Then, slowly add in the dry ingredients and mix on low until a dough forms.
Place that bowl into the refrigerator (covered) for two hours. While you are waiting for the dough to cool, dice your chocolate and cut your marshmallows in half.
Once your dough is ready to roll (dun dun tsss), preheat your oven at 325 degrees F. While that preheats, roll about 2 tbsp of the dough into a ball, place it on a parchment paper lined cookie sheet, and repeat those steps until you fill your sheet. I got about 6-8 cookies on each cookie sheet. Leave at least two inches for the cookie to expand while baking.
Once finished, I used another chocolate bar to shave chocolate over the hot marshmallows. It added for a nice garnish. This is totally optional.
I let the cookies cool for 15 minutes before transferring them to a tray to be displayed later.
