What I have had enthusiasm for, however, is Scandinavian cuisine. A much adored Scandinavian Cookbook from boy has provided a perfect platform from which to conquer that age old new years resolution "Eat Healthy".
We started the New Year with soft boiled eggs with anchovy soldiers to dip and for dinner we cooked fresh mackerel, with buttered leeks, seasoned carrots and new potatoes. (Recipes to come)
