Blackberry Banana Muffins

Ingredients:
90ml Milk
2 Eggs
150g Melted butter
225g Plain Flour
1 Tso Baking powder
150g Caster Sugar
2 Ripe Bananas
160g Fresh blackberries

Whisk the milk, eggs and melted butter together roughly.

Add the plain flour, baking powder and caster to the butter egg mixture, and using a whisk mix until all combined. The batter maybe slightly lumpy, but don’t worry.

Peel to ripe bananas and with your hands or fork mash the banana and add to the batter and stir

Measure out the blackberries and add to the batter

Give the batter a last quick whisk combining all the fruit into the batter.

Scoop batter evenly into 12 muffin cases

Bake the muffins in the oven at 180c for 25-30 minutes until nicea golden brown.

Great little snacks, lunch box treats or breakfast on the go.
