Black Bean Brownie Bites (Dairy, Gluten/Grain and Refined Sugar Free)

You can never have too many brownie recipes or foods with chocolate...well in my opinion anyway.  I wanted to make something with some substance that can be eaten for breakfast or taken a long as a snack. With a strong enough blender or some patience you will not even notice the black beans but will have the benefit of the protein and fiber.  This recipe should work just as well for brownies as along as you cook them a little longer.

Ingredients
  • 1 3/4 cups cook black beans (I think navy beans would work as well)
  • 2 tablespoons ground chia or flax seeds
  • 1 tablespoon psyllium husk
  • 1/2 cup non-dairy milk
  • 1/4 cup grapeseed oil
  • 1/2 cup palm or coconut sugar
  • 1 teaspoon gluten free vanilla
  • 1/2 cup cocao or cocoa
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda

Directions
  1. Preheat oven to 350 F and prepare mini muffin pan.
  2. In a blender combine beans, chia seeds, milk and oil until very smooth.  Add palm sugar, vanilla, cocoa, salt and baking soda and stir until well combined.
  3. Scoop into prepared pans and bake for 13-15 minutes.
