Beet Salad with Apples, Grapes and Walnut Vinaigrette

I know it sounds like an odd combination, but this incredibly simple salad of steamed beats, diced apples, purple grapes, mellow green onion, dressed with a walnut vinaigrette, will definitely land on our dinner table again.

And if you're not a beet lover?

You're missing out, but I get it. I'm not a fan of mushrooms. Replace the beets with diced celery, and you'll have a healthy salad with crunch.

Ingredients

  • 2 cups baby beets, steamed and cubed
  • 2 cups red grapes, halved
  • 1 medium apple , chopped
  • ¼ cup green onion, very thinly sliced
  • ½ ea lemon , juiced
  • 1 tablespoon walnut oil
  • 4 tablespoons walnuts, chopped

Instructions

    Combine ingredients in a bowl and chill for 15 minutes. Season with salt to taste.
