With school in full swing now, it's time to be ready for the time kids walk in the door in the evening, plop their bags on the floor and announce, "I'm hungry!" If you usually prepare fried snacks for your kids, surprise them one day with a fragrant, lovely banana coconut payasam, made without sugar! I have to admit, this is a new flavour for me, but in a pleasant way!

Ingredients:

  • 1 tbsp Raw Kerala Banana Powder
  • 1/2 cup water
  • 3 tbsp grated jaggery (Use 100% Organic Jaggery)
  • 1 tsp ghee
  • 1/4 cup coconut milk mixed with 3 tbsp of water.
  • A pinch of cardamom powder
  • A pinch of ginger ppwder
  • Raisins, cashews and dry almond slices fried to garnish

Method:

1. Take water in a pan and mix the Raw Kerala Banana Powder, ensuring no lumps.

2. Cook this mixture for 2-3 minutes. Add ghee and continue mixing as it starts to thicken.

3. Add the grated jaggery and diluted coconut milk to this mixture, followed by the cardamom powder.

4. Add the ginger powder and mix well.

5. Finally, add the fried raisins, cashews and sliced coconut pieces.

6. Mix & serve while still warm.

This banana coconut payasam is nice and sweet, and is comforting to have when it's raining outside. The coconut milk adds a good smoothness, while the coconut bits add a nice crunch. An easy payasam that'll please the young and the old alike!
