Slow Down and Savor - a food blog
Now that the weather is warmer and the sun is shining longer, I’ve started preparing lighter and brighter dishes in the place of the earthy and hearty winter fare we’d been enjoying.
Last night, I whipped up a super delicious, and surprisingly easy dinner of baked tilapia, rice and green beans. Best part? It fits right in with our new attempt at healthy living and healthy eating. Yum.
- 3 x 3 ounce tilapia filets
- 2 tbsp. butter
- A few teaspoons of seasoning of choice (I used HEB's Costal Blend seasoning, but Old Bay or any other seasoning you are feeling sounds good will work)
- 1 lemon, sliced
- Preheat the oven to 375 degrees F.
- Grease a 9x13 inch baking dish.
- Season your filets on both sides.
- Place the seasoned tilapia fillets in the bottom of the baking dish and dot with butter.
- Top each one with a slice or two of lemon.
- Bake for 25 to 30 minutes in the preheated oven.
