I was trying to figure out what to eat one Saturday morning when I opened my fridge and tmy eyes landed on a Hass avocado and two lonely eggs hanging out on the fridge door…so this happened…
Baked Eggs In Avocado
Ingredients
- 1 ripe Haas Avocado (those are the little dark bumpy ones)
- 2 eggs (I like using medium)
- salt and pepper to taste
- 1 tsp olive oil
- garlic powder (optional)
- chilli powder (optional)
Directions
- Pre-heat Oven to 425
- Cut the avocado in half and discard the seed.
- Scoop out a bit of the center of each avocado to make room for the egg white and yolk to sit in. (When scooping, it’s better to go a little deeper than wider)
- Grease the bottom of a loaf pan or two oven safe ramekins with oil.
- Place avocado halves in pan
- Crack each egg carefully and drop the egg, yolk and all) into each well of the avocado halves.
- Sprinkle with salt, pepper and other spices to taste.
- Cook for 20 minutes or until the egg is fully cooked.
That’s it! I usually season with salt, pepper and garlic powder and top it off with a tablespoon of fresh salsa on each avocado. (This recipe is a great source of omega-3s and protein by the way).
