Baked Cod with Potatoes – Baccala’ Al Forno (Cooking with Mom)

This one is a very typical dish from my hometown. It is made used salted cod fish fillets which you will soaked in water for 2-3 days (to get rid of the salt) and then bake with potatoes, onions, capers and breadcrumbs.

It is a very easy recipe which I learned from my mom and that I made for my family when I was in Italy over the Christmas holidays.

Here is the step-by-step instructions. Hope you like it!

Ingredients (serves 4):

  • 4 fillets of cod fish
  • 2-3 medium side onions
  • 4 large potatoes
  • bread crumbs
  • extra virgin olive oil
  • salt and pepper
  • 1/4 cup mini capers
  • lots of fresh parsley
  • 2 tbsp flour

Start off by getting all your ingredients ready!
Slice up the onions

mince the parsley

Slice up the potato

then grab the cod fish, path it dry

then coat it lightly in flour

In a baking pan drop a few tbsp of extra virgin olive oil and lay the onions, some parsley, a tbsp of mini capers, salt and pepper

add one layer of potatoes, with more onions, parsley, salt and pepper (no capers this time).

Then lay the cod fillets and

repeat with again salt pepper, parsley and some capers

Cover it up with one final layer of potatoes, onion, salt, pepper, capers, parsley and breadcrumbs

Place the pan on the stove and cook on low heat for about 5 min, Then add 2 cups of water, cover with a lid and let it cook for about 30 min.

Bake it at 180 (pre-heated) for another 30-40 min.

Remove from the oven and let it sit on your kitchen counter for 10-15 min before serving it.
