badami paneer
cottage cheese cooked in almond gravy
- paneer ,cubed - 1 cup
- tomato - 2 pureed
- onion - 1 finely chopped
- red chilli - 1 no
- garlic cloves - 2 nos
- almonds/badam - 6 nos soaked in warm water
- ginger garlic paste - 1 teaspoon
- red chilli powder - 1/2 teaspoon
- turmeric powder - 1/4 teaspoon
- garam masala - 1/4 teaspoon
- dry mango powder - a pinch(optional)
- milk - 1 tablespoon
- salt - to taste
- kasuri methi - 1 teaspoon
- oil/ghee - 1 tablespoon
- In the blender add soaked almonds,onion,red chilli and garlic cloves.Make a fine paste from it.Cube the paneer and make it ready.If it frozen,then add it to the warm water for few minutes and then proceed.
- Now take ginger garlic paste,turmeric powder and red chilli powder in a bowl with enough salt for marinating paneer.Mix it well and add the cubed paneer and marinate evenly.rest it for few minutes and then shallow fry them in low flame.drain excess oil once it browned on both sides and set aside.
- In same oil we fried the paneer before,add the paste from almonds and onions and cook till the oil separates.Then add tomato puree,garam masala and red chilli powder and turmeric powder in it.Mix it well and add little water.
- once it the oil separates,add teaspoons of milk and simmer it for 3 minutes.Then add fried paneer cubes along with kasuri methi and mix gently.Cover it with the lid and cook it again for 2 minutes.
- Switch off the flame and serve with chopped coriander leaves sprinkled over it.
