arachuvitta sambar - sambar made with ground masala made from roasted spices and coconut.

Am back with normal routine and this is such a wonderful recipe made with any veggies which we used for making sambar and this is made with fresh ground masala along with coconut.this can be perfectly paired with papad or appalam along with hot steamed rice.

coriander seeds,bengal gram,peppercorns,red chilli and coconut were the ingredients used for making the masala which are dry roasted or roasted with a teaspoon of oil and made a fine paste with water and added along with cooked toor dal or tuvaram paruppu.

bengal gram or kadalai paruppu is used for thickening the sambar.You can also use rice instead of bengal gram in the recipe.

use madras onions or pearl onions for the recipe to get more flavor and aroma.I used normal big onions as it did not get small onions here.

I used red chilli powder in the recipe for additional spiciness in the recipe.you can simply avoid it and proceed with ground masala.

lets move on making the recipe.,

shot some ingredients while making the sambar and i sturggled a bit with low light.But soon after 12 pm,sudden light after 4 hours of continuous rain.Managed to click somewhat better after few weeks.

Step pictorial

  1. roast the coriander seeds,kadalai paruppu or bengal gram,pepper corns,dry red chilli, fesh grated coconut in a kadai with a teaspoon of oil.
  2. Meanwhile heat another kadai with 2 teapoons of oil or ghee and add onions,tomatoes ,ginger,green chilli along with vegetables and saute it till it get done.
  3. after that add cooked toor dal and ground paste made form roasted spices from step 1.
  4. Boil for 5 minutes till the veggies get cooked well.Add enough salt in this stage to make the cooking faster.
  5. finally add the tamarind pulp and again boil in medium flame for another 3 minutes and switch off the flame.
  6. In a separate pan,heat oil or tadka and add mustard seeds,fenugreek seeds,cumin seeds,pepper corns and dry red chilli to it along with curry leaves.
  7. Add this tempering to the sambar and give a mix.

  • tuvaram paruppu/toor dal - 1 cup
  • onion - 1 finely chopped
  • tomato - 1 finely chopped
  • okra/lady's finger - 5 nos
  • green chilli - 2 nos slit
  • ginger chopped - 1 teaspoon
  • kadalai paruppu - 2 teaspoons
  • coriander seeds - 2 teaspoons
  • red chilli - 2 nos
  • pepper- 4 nos
  • grated coconut - 3 teaspoons
  • turmeric powder - 1 teaspoon
  • asafoetida or hing - a pinch
  • red chilli powder - 1/4 teaspoon(optional)
  • tamarind pulp - 3 teaspoons
  • mustard seeds,pepper,cumin seeds,fenugreek seeds,red chilli - for temper
  • salt - to taste
  • oil /ghee - as needed
  • curry leaves - as needed
Instructions
  1. Pressure cook the toor dal with turmeric powder,asafoetida with few drops of oil and enough water in the pressure cooker upto 3 to 4 whistles.
  2. Meanwhile wash the okra or lady's finger and chop into 1 inch pieces.Roast the coriander seeds,kadalai paruppu ,dry red chilli,pepper and grated coconut.Cool it and make a fine paste with enough water.
  3. Heat oil or ghee in a kadai add chopped onions and saute it till it get soft and then add tomatoes,green chilli and chopped ginger to it and saute it well.
  4. Now add okra or any other veggies to it and saute it till it get done.add cooked dal or lentils along with the masala we made from coconut and spices and enough salt for the sambar.
  5. Add little more water and boil the sambar for about 5 minutes till the vegetables get cooked well.
  6. Now add tamarind pulp to it and boil it for another 2 to 3 minutes and switch off the flame.
  7. Heat the tadka pan with 2 teaspoons of ghee or oil and add mustard seeds,pepper,cumin seeds,fenugreek seeds and dry red chilli to it.Finally add curry leaves and add it to the sambar.
  8. Serve this piping hot sambar with papad and steamed rice.
