Apricot Tray Bake

The other week I came home from my three week trip to Bali. Bali was amazing by the way! I will tell you about my trip in another post but I have to admit I definitely missed baking cakes and especially eating them! I made this delicious curd cheese apricot tray bake right the day after I came home! My family just harvested tons and tons of apricots from their garden. They were pretty late this summer… probably because of the terrible cold august weather in Austria. This tray bake is made very easily and consists out of a yeast dough ground topped with a lemony curd cheese topping and apricots. After 30 minutes it comes out of the oven and tastes really light and a little bit crunchy on the bottom.mmmhhh

This is what you will need

for the dough…

  • 300g flour
  • 125ml milk
  • 1 package of dry yeast
  • 40g sugar
  • 40g butter
  • 1 medium sized egg
  • a pinch of salt

Combine flour, dry yeast, sugar and salt in a bowl. Melt butter and combine with milk. Add egg to flour mixture and stir using a cooking spoon. Add milk mixture and knead dough until smooth for about 10 minutes. Cover dough with a kitchen towel and let rise for about an hour.

for the topping:

  • 800g curd cheese
  • 4 eggs
  • 200g sugar
  • zest of one lemon
  • 1 kg of fresh apricots in halves
  • 60g cornstarch
  • 100g apricot jam

Mix together curd cheese, eggs and sugar until incorporated. Add lemon zest and cornstarch and mix for another minute. Pre-heat oven to 180°C. Roll out dough on a parchment paper covered baking tray after letting it rise. Elapse curd cheese on top of the dough. Scatter apricot halves on top of the curd cheese and bake in oven for about 20-30 minutes until top turns golden brown. Let your cake cool out. Then cut into square pieces and dust with sugar right before serving.
