Apple Cinnamon Roll Cake

Autumn has officially arrived in Austria. We now harvested all the apples in our orchard and as usual are now making lots of apple sauce and pies. But this time I wanted to try something new and had the idea to make apple cinnamon buns, which turned out to be more fancier because I layered them or kind of stuffed them into a cake tin. And voilá out of the oven comes an extremely fluffy apple cinnamon bun cake reminding one of apple cinnamon fritters… mmh! 

This is what you will need

  • 450g bread flour
  • 2 eggs
  • 210 ml milk
  • 5 tbsp. butter
  • 4 tbsp. sugar
  • 1tsp. salt
  • 1 package of dry yeast

Combine flour, yeast, sugar and salt in a bowl. Melt butter and add milk to cool off butter. Add eggs and melted butter mixture to flour mixture and stir using a cooking spoon until you have roughly combined all the ingredients. Now start kneading the dough with your hands until smooth and until it isn´t sticky anymore. Cover with a kitchen towel and let rise for about an hour. Meanwhile prepare the filling.

For the filling

  • 1kg of apples
  • 500 ml water
  • 150g sugar
  • 1 tsp. cinnamon
  • 2 tbs. lemon juice
  • 3 tbs. butter

Peal, core and cut apples into 1 cm dices. Combine apples, water, lemon juice and butter in a medium sized pot and bring to a boil. Cook apples until they turn out soft for about 5 minutes. Drain apples and set aside. Combine cinnamon and sugar in a bowl. Roll out yeast dough and sprinkle cinnamon sugar and apple dices on top. Roll up as if you were making cinnamon rolls. Cut roll into 3 cm slices and place into a buttered and floured (or parchment paper covered- way easier!) cake tin. Bake in oven for about 30 minutes until bun turns out golden brown (oven temperature 175°C.)

Enjoy warm or cooles out with a cup of coffee or milk!
