Apple and Blackberry Brioche Bread and Butter Pudding and Degusta Box

I received another tasty Degustabox at the end of August and have been enjoying it's contents in the ensuing weeks.  You can see evidence of that in the lovely Apple and Blackberry Bread and Butter Pudding I bakes with the package of Brioche Pasquier I received in the box, but more about that later, right now  I want to tell you all about what I got in the August box . . .

It was the Brioche Pasquier Pains au Lait which I used to create this delicious Apple and Blackberry Bread and Butter Pudding.

It's rich and fruity . . .
 
Stogged to the hill with fresh autumn cooking apple and hedgerow blackberries.  With a rich and indulgent custard, there is not much not to like about this dessert!  Served warm with lashings of more cream drizzled over top, it went down a real treat!  Simple, easy and delicious!

*Apple and Blackberry Brioche Bread and Butter Pudding*
Serves 4 to 6Printable Recipe   
Quite simply delicious.   All that is good about autumn in a baking dish.
6 brioche bunssoftened butter1 large cooking apple, peeled and grated1 large handful of fresh blackberries140ml of whole milk (2/3 cup)30ml of double cream (3 TBS)1 tsp vanilla extract3 TBS sugarthe zest of 1/2 lemon2 large free range eggs, beaten1 tsp cinnamon1 tsp ginger 
 
Preheat the oven to 180*C/350*F/ gas mark 4.  Butter a baking dish large enough to hold the brioche buns in it side by side.
Cut each bun in half.  Butter each half on the cut side.  Lay the bottom halves in the baking dish.  Sprinkle the grated apple over top.  Scatter with the blackberries.   Mix together the sugar, lemon zest, cinnamon and ginger.  Sprinkle this mixture over top of the fruit.  Cover with the top buns.  Beat together the milk, eggs, cream and vanilla.  Pour this over top of the brioche buns, pressing them down into the mixture a bit.   Let stand for about 15 minutes.Bake in the heated oven for 30 to 40 minutes until puffed and golden.   Serve hot with or without cream.
