Cabbage and Tomatoes Recipe

Growing up in Appalachia, my Croatian Mom had a big garden. She canned for the winter. Our budget for food was tight with four kids and Mom raising us by herself.

She fed us a lot of peasant basic foods, things like beans, potatoes, onions, and, yes, cabbage and other vegetables.

Fried Cabbage and Tomatoes

This fried cabbage and tomatoes is reminiscent of growing up.

Mom would chop cabbage on the kitchen table, then dice the tomatoes very thin. She was a master of herbs and spices, and that's why in this recipe you'll find caraway seeds, celery seeds and ground coriander.

The surprising pops of the seeds when eating this dish make for an interesting and delightful palate pleaser!

Sauteed Cabbage and Tomatoes

It doesn't take long at all for this dish to be prepared. I leave the cabbage slightly al dente then add the crushed tomatoes, mix, turn off the heat, cover and just let all of these flavors meld together.

Mom even sometimes would add stewed large diced potatoes to the cabbage and tomatoes. That very well become our 'meal' alongside pinto beans, and we devoured it!

Fried Cabbage and Onions

Yes, onions bring out even more of the flavors of this fried or sauteed cabbage.

And, believe me, you're getting quite the nutritional powerhouse with this dish:

    • Cabbage contains insoluble fiber and phytosterols, which can help with digestion and keep bowel movements regular.

    • Cabbage is high in fiber and potassium, which can help lower cholesterol levels and maintain heart health.

    • Half a cup of cooked cabbage contains about a third of the daily recommended amount of vitamin C.

Ingredients

  • 1/3 cup extra virgin olive oil, divided
  • 1 cup sweet onions, diced
  • 1 tsp. ground coriander
  • 1 tsp. celery seed
  • 1 tsp. caraway seed
  • 1 tsp. salt
  • 1/4 cup water
  • Crushed tomatoes (16 oz.) + 1/4 cup water to rinse container

Instructions

  1. In a large skillet over medium heat, put half of the olive oil. Add the onions and saute about 3 or 4 minutes until tender. Add half of the cabbage and toss into the onions and olive oil.
  2. Mix together the spices and salt. Sprinkle half on the first addition of cabbage and toss and blend. Add 1/4 cup water.
  3. Add the remaining cabbage and sprinkle the rest of the spice mixutre. Drizzle the remaining olive oil on the cabbage. Toss and blend.
  4. Reduce heat to low. Cover and cook 15 mintues.
  5. Add the crushed tomatoes and water (rinsing out the container). Mix and blend into the cabbage.
  6. Turn off heat. Cover and let the mixture stay warm until serving.
