Aloo Bhindi Masala Recipe

Aloo bhindi masala is a simple yet tasty side dish made with potato and okra/ladies finger.It is very quick and easy to make but the finished curry tastes very rich,flavorful and suitable for rotis/fried rice.Best thing about this curry is you can whip this fast for a weekday lunch or weeknight dinner with out getting toiled in kitchen,yet make an impressive dish that everyone would relish.I have seen this in menu many times in restaurants but mostly they were aloo bhindi fry.Here I have made it is a semi dry gravy perfect to scoop with roti or eat with mild flavored rice/pulao.As far as I have seen potato and okra should be deep fried but I have shallow fried them using less oil without any compromise in taste.This is a very straightforward and adaptable recipe,where you can totally play around with spices and spice level.Potatoes and okra being hit among kids,there is no wonder this would be a favorite among kids and they would thoroughly enjoy this curry.Try this simple curry with your pantry staples and I am sure you will love this :)
Aloo bhindi masala recipe
Star ingredients:Potato and okra
Time:20 minutes
Serves:3


Ingredients:
2 large potatoes
15-20 okra/ladies finger
1 large onion
2 large tomatoes
5-6 cashews (optional)
1 teaspoon chilli powder
1 teaspoon garam masala powder
1/2 teaspoon turmeric powder
1/2 teaspoon coriander powder
1 teaspoon cumin seeds
Small piece of ginger crushed
Kasuri methi
Oil for tempering +2 tablespoons for shallow frying
Salt
Instructions:
1.Wash and peel the potatoes.Slice them into thin fingers.
2.Wash and pat dry okra thoroughly and slice them lengthwise.
3.Heat a pan and add 2 tablespoons oil. Shallow fry okra till it shrinks little bit and cooks completely.Drain to a kitchen towel.Shallow fry potatoes till they turn golden brown from outside and soft when pricked.Drain to a kitchen towel.
4.Grind cashews,onion and tomatoes to a smooth paste.
5.Heat a kadai and add oil.Add cumin seeds and once it splutters add crushed ginger.Saute for 2 minutes.
6.Now add the onion-tomato paste and saute till raw smell goes off.
7.Add all the spice powders,salt and 1/4 cup water.Mix well and cook for 3-5 minutes.
8.Add the drained potatoes and okra,mix gently and simmer for 5 minutes.
9.Add kasuri methi,serve with rotis/rice.
Notes:
1.Addition of cashews is purely optional,you may avoid it for low calorie version.
2.You can opt in to deep fry the veggies too.
3.Make sure to dry the okras thoroughly before slicing.
