Almond Joy Oatmeal (Gluten Free + Vegan)

This Almond Joy Oatmeal is a creamy chocolate oatmeal that’s sweetened with just a ripe banana and topped with coconut, almonds, and more chocolate! This hearty breakfast is decadent, filling, and you can enjoy it guilt free – unlike its candy bar equivalent!

I’ve been becoming more and more of a breakfast person as of late. Historically, I’ve been a breakfast skipping person, or the kind of person who eats their breakfast around 11 am and then doesn’t eat again until dinner.

I know, I know, that’s not good to do – don’t give me that look! I’m learning, slowly but surely, and my body is starting to get used to eating earlier and earlier. I’ve been trying to eat within an hour or two of waking up these days, and my body seems to be liking it a lot.

Since I usually can’t be bothered to think too hard about what I’m going to eat that early in the morning, I’ve been tending towards my breakfast classics. I’ve been in an oatmeal mood lately, so a lot of my mornings have been graced by a bowl of my Chocolate Strawberry Oatmeal.

I don’t always have fresh strawberries on hand though, so the other day I switched it up, going the coconut route instead of the strawberry route, and oh. my. goodness. you NEED these oats!

Almond Joy Oatmeal!

If you’re a coconut and almond lover like myself, you’re going to be all about this Almond Joy Oatmeal! The oats are super creamy and sweet…despite the fact that there’s NO added sweetener. All the sweetness is thanks to one ripe banana that gets mashed into the oats as they cook, letting them absorb all that fruity sweetness.

The oats are cooked in coconut milk, which helps make things super creamy, with some shredded coconut in there as well, making things extra coconutty and adding some extra texture. A tablespoon of cacao powder adds all of the chocolate flavor!

The bowl of chocolatey oats is topped off with almond butter, crushed almonds, coconut flakes, and some melty dark chocolate…swoon-worthy, much?! You definitely don’t need to convince me to eat breakfast when it looks like this!

Even better is that it’s DONE in about 10 minutes so you can enjoy your deliciously chocolatey bowl of oatmeal with your coffee or tea and get on with your day. You’re going to love this one. Enjoy!

Ingredients

  • cup gluten-free rolled oats
  • 2 tablespoons shredded unsweetened coconut can also use coconut flakes, depends on the texture you prefer!
  • 1 ripe banana mashed
  • cup coconut milk
  • 1 tablespoon cocoa powder

!For the toppings

  • Coconut flakes
  • Almonds chopped
  • Almond butter
  • Dark chocolate chips or chunks

Instructions

  1. In a small saucepan, combine oats, coconut, mashed banana, coconut milk and cocoa powder. Simmer until milk has absorbed into the oats, about 5-8 minutes, stirring occasionally.

  2. Place the oatmeal in a bowl once it’s fully cooked, and top with coconut flakes, almonds, almond butter, chocolate, and any other toppings you’d like. Enjoy immediately!
