Almond and White Chocolate Short Bread Cookies

Short bread cookies are the easiest of kind for a budding baker like me.It is hard to mess up with,very few ingredients,comes together quickly and you make the log ahead ahead of time too.I bake cookies regularly for our snacks,mostly I make it with whole wheat flour,but this time I wanted to do it with all purpose flour as I wanted them to be light and melt in mouth.I was not disappointed,these cookies were so light in texture and they just melted in mouth.The almond flakes adds an interesting crunch to the otherwise smooth cookies while the white chocolate chunks here and there are a sure treat!. This is a very flexible recipe,you can add anything that pleases you to the dough along with flakes almonds or feel free to entirely omit almonds and add any other nuts,raisins or even dry fruits.You can even add candied orange or ginger to add a sharp note.As far as white chocolate you substitute it with dark,bitter sweet chocolate chunks,but I highly recommend you try this combo,they are addictive,really :)
Almond and white chocolate short bread cookies recipe
Star ingredients:All purpose flour,almonds and white chocolate
Time:20 minutes+20 minutes
Yield:30
Ingredients:
1 cup softened butter
1 1/2 cups all purpose flour
3/4 cup sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup toasted crushed almonds
1/2 cup chopped white chocolate
Method:
1.Mix butter and sugar.Beat until light and creamy.Do not overbeat.
2.Mix the salt,flour and baking powder well.Add to the sugar mixture and mix well.
3.Fold in the crushed almonds and chopped chocolate.Mix well and make a sft dough.Dough will be very soft and little bit sticky.
4.In this step you can either shape into a log or flat disc and refrigerate.I made one log and just refrigerated the remaining dough for 2 hours
5.Now preheat oven to 180C and prepare a baking sheet.
6.Now take the log and cut into circle 1/4" thickness.Alternately pinch small balls from the dough and shape into cookies.
7.Bake for 15-0 minutes,depending up on your oven.I baked one batch for 15 minutes and the other for 18 minutes.Cool and store.
Notes:
1.As I said above you can use any nuts,dry fruits along with almonds
2.You can increase the baking time if you need crunchy cookies.
