A Perfect Delicious Turkey Sandwich For Food Lovers

By: Don Zilleri

Turkey sandwich is one of the highest demand sandwiches especially in west coast. Turkey has lower fat and is very tasty. I love a good Turkey sandwich. In my recipes I always create sandwiches, which every bite is simply delicious. Turkey sandwich is also very popular in holiday seasons. Let’s create an extraordinary Turkey sandwich.

Oven Roasted Turkey, portobello and Garlic:

To start you need your Turkey. I mention in my other recipes, nothing taste better when you create your ingredients from scratch. So choose a fresh turkey from the market. It’s your choice whether to get a whole piece or just white meat breast. If you need to use it for catering or your restaurant, then get a whole piece. But since the purpose here is to make a sandwich at home, I recommend just the white meat.

-  Turkey

You have your fresh Turkey, brine it with salt water, chopped garlic and 4 Oz of beer. Let it stay in the fridge for about 6 hours. Wash it perfectly then brush it with butter.  Add Pepper, Coriander, Thyme and Basil and rub it to absorb all the spices. Place in the oven and cook perfectly. The perfectly cook Turkey with safe internal temperature is 165 degrees in the middle. To find out how long in to place the turkey in the oven, there are charts that can direct you per pound of Turkey. The best and safest practice is to check the internal temperature with proper thermometer.

When ready, thinly slice your Turkey.

-  Bread

The entire taste of a sandwich depends on the bread type and quality.  For This sandwich, a fresh and crispy 12-inch or square Ciabatta is perfect.

-  Garlic Sauce

Grab a small mixing bowl and add:

  • 2 spoons of Mayonnaise,
  • 1 teaspoon of aged balsamic vinegar,
  • 1 teaspoon of fresh squeezes lime,
  • 3/4 spoon of freshly grinned garlic.
  • 1/2 teaspoon of Pomegranate sauce (you can buy this from Mediterranean shops)
  • 1/2 teaspoon of black coarse pepper.

Mix it evenly using whisk.

-  Portobello Mushroom

Portobello Mushrooms are beautiful in shape and meaty in texture. After washing the mushroom, slice it in Julienne cut with a sharp knife. Place them in a cooking tray and add a bit of extra virgin Olive Oil, Salt, Pepper, Oregano and Basil. Mix it in the tray and 4 Oz of red wine. Place it in the oven and broil it. It will be ready in less than 10 minutes. Other method is to just reduce the wine in a pan on the ranger.  I prefer oven as it gets heat from all over.

-  Roasted Garlic

From the loaf, peel some garlic. The easiest way to peel the garlic is to place your knife from its side on the garlic and tab it hard on the top, pressing the garlic in the bottom.  Your blade should be facing away from you. Place all the garlic in the cooking tray and add extra virgin Olive Oil, Salt, Pepper and Oregano and place in the oven to broil. It is ready when it turns golden and roasted on top.

-  Roasted Red Bell Pepper

Grab a fresh and organic red bell pepper and slice it in thick pieces.  Pour a little extra virgin Olive Oil on top and mix it then place it in the oven until roasted.  You can also grill the pepper.

-  Fresh Buffalo Mozzarella

You can make the curd or buy the curd from the local shops.  Make sure the curd is from the milk of Buffalo. Add hot water on it and shape the cheese into balls.  When ready cut the Mozzarella in 1/4 inch thin slices.

Slice the Ciabatta bread in the middle and remove excess dough. Spread the garlic sauce evenly on the bread and place your turkey on top. Use your kitchen tong and add your Roasted Red Bell Pepper and Roasted Garlic.  Place your Mozzarella Cheese slices on top and add a little coarse Pepper then the Portobello mushrooms above the Mozzarella Cheese. Add fresh Basil leafs and green onion on top and place the sandwich in the oven brushing the bread with butter.

The Turkey sandwich is ready when the bread’s color is golden.

Sandwich Side:

Fresh Mediterranean salad:

Grab a cucumber wash perfectly and cut in small cubes without peeling the skin and place in a salad bowl.

Slice a red onion in small cube sizes same as the cucumber and mix with cucumber. Cut a Romano tomato in the same cube size and add to the mix. Then mix the salad with fresh lemon juice, Salt, Pepper, Oregano and Basil leaf and mix well. This fresh tasty salad is the best company for the Turkey salad.

No matter if you run a catering business or simply want to make a sandwich, mixing of the flavors is an artistic way of showing your love for what you do. Have a recipe you like to share?
