While having lunch with my grandson to celebrate his 8th birthday, we brainstormed potential soup ideas. Tonight’s version was suggested then and tested while he and his family joined us for Christmas. Pizza Supreme (or Meat Lover’s Pizza) was a hit! Just think of everything you’d want to put on a pizza and throw it in!
Ingredients:
2 onions, chopped
1 bell pepper, chopped
4 stalks of celery, chopped
(1 cup sliced mushrooms-I would have used them if I had not used them in something else!!!)
2 Tablespoons garlic, minced
olive oil
1/2 lb or more ground beef (I forgot to save some for this but thawed out some sirloin beef patties and crumbled them! Hey, it worked.)
1 package of pepperoni
1 cup baked chicken, shredded
2 large cans petite diced tomatoes
15 cubes beef bouillon (dissolved in 8 cups hot water)
1/4 cup chopped green olives (would have used black olives but didn’t have them)
1 small jar pimento (because I had it in the pantry)
1/2 cup sundried tomatoes, sliced (because I had them in the freezer!)
4 bay leaves
3 Tablespoons Italian seasoning (or more to taste)
*Serving tip: Top bowls of soup with shredded mozzarella cheese and/or parmesan cheese.
Directions:
Saute onion, celery, bell pepper (and mushrooms) in oil for about 5 minutes. Add garlic and ground beef and cook until meat is browned. Add all other ingredients and simmer for about 20 minutes or more to blend the flavors. Add more water if needed.
Serve with pizza crust sticks or sour dough bread. This soup is plenty for a complete meal unless you want to add a tossed salad.
