As summer is in full mode these days, we (my family) are enjoying different kind of frozen treats. Some of them are updated on blog like these Mango ice cream, Pistachio kulfi- the Indian style ice cream and strawberry ice cream. All these recipes are eggless and did not need any machines to prepare.
Pineapple is one of the most delicious flavour which I have recently discovered. I was not always a huge fan of pineapple, maybe because most of the time I ate pineapple it wasn't ripe enough but this summer when I bought a pineapple and inadvertently forget to eat it for around 5 days. I saw that the fruit turned to yellow and skin was little soggy. When I cut it down and tasted a piece, UUMM, it was so sweet, that was the real sweetness. So now whenever I buy pineapple I keep it at counter at least for 3 days.
In this pineapple recipe I have used fully ripe pineapple and did not need to add much sweetener in the recipe. But if you like you may increase the sweetener. You can also replace sweetener with condensed milk. I am sure it will enhance the flavour.

1 1/2 cups frozen pineapple chunks
3 tablespoons honey (agave syrup work too)
1/2 cup fresh whipping cream or double cream
INSTRUCTIONSStep 1. In a mixer jar, add frozen pineapple and honey. Whiz it up for 2-3 minutes till both ingredients incorporates together.
step 2. In a large bowl add fresh whipping cream and whip it until the soft peaks forms.
Step 3. Add pineapple and honey mixture into whipped cream and fold it until fully incorporated.
Step 4. Once the mixture is ready shift it to a container (here I have used loaf pan). Level the mixture. Place it in a freezer for 1 to 2 hours to become firm.
Step 5. I have presented this pineapple ice cream in shell for which take a pineapple, cut it into half equal portions. Take one part, scoop all the flesh out which could also used as fresh pineapple bits and the pineapple shell is ready for ice cream.
Step 6. Take the ice cream out and beat it little with whisk or spatula to break ice crystals.
Step 7. Then transfer the ice cream mixture to shell and freeze again for 5- 6 hours or overnight.
Delicious pineapple ice cream recipe is ready to serve with delicious fruits as topping.
