Good evening all! I've been at it again, the whole baking malarky, it's addictive, I keep bookmarking new recipes every day and I get so excited about cooking them all! I didn't have much time today but wanted to bake something any way, so decided on the 3-ingredient peanut butter cookies!
I substituted the sugar for a new product called Natvia, an alternative to artificial sweeteners and sugar that is made with naturally sourced ingredients and has ZERO calories!

INGREDIENTS:
1 cup peanut butter (crunchy or creamy)
- I used The Whole Earth 3 Nut butter
150g of Natvia (or regular sugar if preferred)
1 egg
DIRECTIONS:

Line a baking tray with greaseproof paper.
2.
Preheat oven to 175 degrees c.

Mix together all ingredients until well combined
4.
Form dough balls in your hands
(Roll in an extra bowl of sugar, if desired, to coat the outside of the dough ball)
5.
Place on the baking sheet at least 2 inches apart
Push down with a fork a little
6.
Bake for 6 to 8 minutes, until the cookies are just slightly browned on the botton, being careful not to over-bake.
7.
Remove from the oven and leave to cool for an hour or so!
