These super easy Cookie Butter Cookies only have three ingredients! This quick recipe will become a staple once you try these soft, flavorful cookies.
Those are the times my heart gets all warm and mushy. I love that the lives of the recipes I create don’t end when the last bite is taken in my kitchen. They come back to life each time one of you makes a recipe of mine and shares it with your friends and family.

One of the reasons I love it so much is because I love hearing that a recipe worked well for you guys. Even though I know it worked for me, it’s reassuring to hear it works in all your kitchens too. Usually, when I’m posting something, I only know that it worked for me. This recipe has already been tested by a few of you though!
With just three ingredients, you can’t go wrong. Ingredient number one and arguable the most important is of course, the cookie butter! I used Trader Joe’s Pumpkin Spice Cookie Butter, which is unfortunately, like all things pumpkin spice, seasonal. If you happen to be reading this in the fall when it’s still around, try it! It’s a little bit of pumpkin spice magic. If you can only get your hands on regular cookie butter, you’ll still have some seriously delicious cookies on your hands.

3-Ingredient Cookie Butter Cookies- ¾ cup cookie butter (I used Trader Joe's Pumpkin Spice Cookie Butter)
- 2 eggs, room temperature
- ½ cup all purpose flour
- Preheat the oven to 350°F.
- In a medium bowl, whisk together the cookie butter and the eggs. Add the flour and fold it in until thick dough forms. Place cookies on a parchment lined cookie sheet.
- Bake for 8-10 minutes or until the edges are set and the top still looks a little shiny (mine were perfect at 9 minutes). Do not over bake or they will be dry.
