1. Strawberry Bites
Ingredients:
- Strawberry jam – 1 spoon
- Spreadable cream cheese – 1 spoon
- Whole Wheat or Ragi crackers – 2
Instructions:
Mix the cream cheese and strawberry jam. Apply this mixture on the crackers. Alternatively, you can mix it with blackberry or raspberry jam.
2. Coco Nut Brownies
Ingredients:
- 2 cups seedless dates, finely chopped
- ½ cup muesli
- ¼ cup desiccated coconut
- ¼ cup chopped almonds and cashews each
- ¼ cup chopped cashew nuts
- ¼ cup unsweetened cocoa powder
- ¼ cup Homemade chocolate syrup
- 2 -3 tablespoon olive oil / coconut oil
Add dates, desiccated coconut, chia seeds, raisins, cocoa powder and half the quantity of all the nuts and dry fruits into a food processor or grinder jar and pulse till well blended. Add muesli and oil and pulse again. Line a loaf pan with parchment paper. Add the pulsed mix and apply pressure with palms or back of ladle and flatten it. Add the homemade chocolate syrup over it in a uniform layer. Scatter the remaining nuts and dry fruit evenly over the chocolate layer. Keep the loaf pan in a freezer for at least 30 minutes so that it firms up well. Remove the brownie loaf from the pan and cut into desired shapes using a sharp knife. They last well for about a week in the refrigerator.
3. Deviled Eggs
Ingredients:
- Boiled eggs
- Tofu Cashew Mayonnaise
- Sweet pickle relish
Instructions:
Cut the eggs in half. Take a bowl and put the yolks in it. With the help of a fork, mash the yolk. Add the mayonnaise and relish. Combine them well and put the combination into the egg whites.
4. Dry Fruit Modak
- 1 cup finely chopped seedless dates.
- ¼ cup chopped almonds
- ⅛ cup desiccated coconut
Combine all the ingredients in a mixing bowl. Pinch out a small portion of the mix and make modak shapes using a modak mold. You can also use your hands to give them a modak shape.
5. Cinnamon Pears
Ingredients:
- Ground cinnamon – ¼ teaspoon
- Powdered Jaggery – 1 teaspoon
- Diced pears – ½ cup
Instructions:
Pick up a bowl and place the pears in it. Add the cinnamon and jaggery to it. Toss and serve as is or toast it lightly before serving.
6. Fruit Pizza
Ingredients:
- Homemade peanut butter
- Honey
- English muffin or whole wheat bun
- Chopped Fruit
- Cake sprinkles, banana slices, marshmallows or raisins for toppings
Instructions:
Put some peanut butter on the prepared English muffin. Then, add fruit and toppings of your choice. If desired, drizzle a little honey over the top.
7. Peanut Butter Balls
Ingredients:
- Homemade Peanut butter – ¼ cup
- Powdered milk – ½ cup
- Honey
- Waxed paper
Instructions:
Add the powdered milk, peanut butter and honey in a bowl and mix well. Make small balls and coat them in cocoa powder or chocolate sprinkles if you like. Put them on the waxed paper and refrigerate for half an hour.
8. No Bake Chocolate Date Cookies
Ingredients:
- Dry Dates Powder – 1 cup
- Homemade date syrup – 1 cup
- Semi-sweet chocolate chips – 1 cup
- Coconut – 1 cup
- Creamy peanut butter – 1 cup
- Quick oats – 3 cups
Instructions:
In a large saucepan, mix the dates powder and dates syrup and heat till it becomes a uniform mixture. Remove it from heat and stir in the peanut butter and chocolate chips. Mix well and add the coconut and oats. Drop one rounded tablespoon onto the parchment paper. Let it cool for 20 to 30 minutes till set. Store in an airtight container.
9. Mini Pizza
Ingredients:
- Homemade pizza sauce
- Shredded mozzarella cheese
- Half an English muffin or whole wheat bun
- Pitted and sliced olives
Instructions:
Apply the Pizza sauce on the English muffin and sprinkle the mozzarella cheese on top. Garnish with a few olive slices.
10. Rainforest Sundae
Ingredients:
- Homemade chocolate syrup
- Frozen vanilla ice cream or yogurt
- Chunks of mango, pineapple or banana
Instructions:
Place the chunks of banana, pineapple or mango in an ice cream dish and add a scoop of ice cream or yogurt. Top with the chocolate sauce.
