Bouillabaisse is a traditional French seafood stew originating from Marseille. Recipes vary but the Galvin version uses sea bream, cod, scallop, saffron potatoes and cucumber. Provided on the side was more of the seafood broth, should you want to pour more; croutons; Gruyère cheese; and rouille (an aioli-type sauce of ground garlic, chilli and breadcrumbs, flavoured with saffron).

Find out what we thought about the sea bream, cod and scallop dish here.
