What’s Cooking–6 Fast Meals To Fuel You And Your Picky Family

Let’s do something different today (while I am on vacation). One of my many challenges in life (beyond these First World Problems) is what the hell to make for dinner. This is further complicated by the fact that I want all family members to actually eat what I cook and not bitch about. I also need it to be somewhat fueling/substantial for me as a person training for an Ironman. Further, it needs to be inexpensive and easy (like me-hahaha). I don’t want much, do I?

So, here you go. A few recent recipes that have fit the bill for me and the family. I am not pretending I created or invented these in any way, shape or form. I don’t see a reason to do that when I have Google and Pinterest. Just click on the recipe name to take you to the recipe (or the photo).

1. White Chicken Enchiladas – I’m not a big fan of the Cream of Mushroom soup version of these, so I really like this recipe. It’s pretty easy to throw together and turned out delish. Four out of four family members ate it and liked it. It actually comes out looking just like the picture (minus the pretty blue plate).


2. Vegetable Curry with Chick Peas – Okay, I am not going to pretend my family would eat this, because they wouldn’t. Sam was my best hope, but his response was “Well, it would be okay, but where is the meat?” I like to make a huge vat of something at the beginning of the week that I can eat for my lunches. This was perfect, especially because you can just throw it all in the crockpot. I eat it over couscous with some plain yogurt on top.

3. Baked Tacos – Basically your average taco with a twist. Four out of four ate it. Easy and quick.

4. Easy Tomato Soup with Grilled Cheese Croutons – This was a nice deviation from the typical grilled cheese and canned Campbell’s soup. It got slurped up around here.

5. Easy Meatless Manicotti. I have made this 40 million times. It is a huge hit and pretty healthy. I love that you don’t have to bake the pasta ahead of time.

6. Greek Pasta with Meatballs. I happen to love lamb and these meatballs are made with ground lamb (I don’t like to think too much about a lamb being ground up, but let’s move on). Regular lamb is pricey and it’s much cheaper to buy a pound of the ground stuff. I love the undertone of cinnamon in this recipe and my family happens to think orzo is a fun pasta to eat, so we are all set!
