Vegetarian Wednesday: Zucchini Patties with Rich Tzatziki

We're continuing our vegetarian LCHF week and have come to Wednesday's dinner: Zucchini patties with rich tzatziki.

Here's a recipe and the nutritional value comes to 79 and 8 energy percent carbohydrates:

Recipe

Zucchini patties with rich tzatziki, 4 servings

Zucchini patties:

  • 2 zucchinis
  • 1.5 tablespoon psyllium seed husk
  • 4 eggs
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika powder
  • salt and pepper
  • 2 ounces (50 g) butter

Tzatziki:

  • ½ cucumber
  • 1 cup (2 dl) Russian yogurt or sour cream
  • ⅓ cup (¾ dl) olive oil
  • 1 garlic clove
  • lemon juice
  • herbal salt
  • pepper (optional)

Grate cucumber for the tzatziki. Strain and sprinkle with salt. Let sit for 10-15 minutes and then squeeze out the liquid. Mix yogurt or sour cream and oil. Stir for a while to make it blend. Press garlic, add cucumber and salt. Olive oil may have a peppery and slightly bitter taste, add some lemon juice to balance. Grind down some pepper if needed. Let rest in fridge.

Grate the zucchini and do the same thing as with the cucumber, i.e. salt and let strain. After 10-15 minutes, squeeze out the liquid. Mix the zucchini with the rest of the ingredients in a bowl and let sit for 5 minutes before frying in butter until golden brown on both sides. Serve with broccoli and a tomato.
