We can use store-bought kozhukattai flour or homemade ones. Kozhukattai flour is the same one that we use for idiyappam and puttu making.

How to make ulundu kozhukattai recipe:

  1. Soak ½ cup of black or white urad dal with enough water for 2 to 3 hrs.
  2. If you are using black urad dal, remove the husks. If it is a white one, just rinse for 2 to 3 times with enough water.
  3. In a mixie, add cleaned urad dal, 2 green chilies, 1 tsp of salt, and ¼ tsp of asafoetida. Grind to a coarse mixture.
  4. Spread the mixture in the idli plate and steam cook for 10 minutes. After 10 minutes, insert the spoon or knife. It should come out clean to make sure it's done.
  5. Cool it completely and crumble into small pieces.
  6. Heat a kadai, add 2 tsp of coconut oil, once heated add 1 tsp of mustard seeds, ½ tsp of urad dal, 2 red chilies, and few curry leaves.
  7. To it add ¼ cup of freshly shredded coconut. Saute for a few minutes and you notice the aroma comes.
  8. Now you add the crumbled urad dal. Keep the flame medium stir for a few minutes.
  9. Add a few drops of lemon juice and mix well. Now urad dal pooranam is ready.
  10. To prepare kozhukattai dough, add 1 cup of kozhukattai flour, 1 tsp of salt, and 1 tsp of coconut oil.
  11. Add rolling boil hot water little by little and form a soft dough. Don't make it too loose as you cannot make cups in that consistency.
  12. Grease your hands with oil, take a small amount of dough, and roll it like a ball.
  13. Start making a cup shape and fill with 1 spoon of ulundu stuff and seal the edges.
  14. Do the same for remaining dough and spread in the idli plate. Steam cook for 5 minutes.
  15. Once done, serve uppu kozhukattai as hot 😊

Yes, 😊 there is a couple of points to ensure. Use boiling water little by little and make a dough. Because the perfect dough is important for soft kozhukattai. Secondly, don't skip adding lemon juice in ulundu pooranam. It enhances the flavor and taste of pooranam
