The City of Nawabs Unravels in Mumbai

Elevating culinary skills into an art form, the ‘Khansamas’ popularly known as the bavarchis of the Awadh region curate new mix of spices and flavours, bestowing the country with succulent recipes. Known for its Nawabi Heritage, Lucknow’s gourmet history continues to live in the kitchens of Masala Bay.

Let the Nawabi culture embrace you as you walk into a regal ambiance. Mitti ki Surahi and Sandook are a perfect reflection of the rich Lucknowi landscape while the rhythm of the Qawwali and lilting soft notes of Sufi Music, are in tune with the opulence of Awadh. Revel in this prolific era as you pamper your Begum to mehendi and gajra, like a true Nawab!

Reviving the lost imperial cuisine of India, Chef Amninder Sandhu together with Janaab Sabir Ali who has been specially flown down from Lucknow, pay tribute to the ustads or the ‘Masters of the Kitchen’ through an assortment of delicacies. The specially crafted menu features Muffrah – drink of saffron, kewra, sandalwood and nagarmotha, Lucknowi Boti Kebab – lamb chunks in robust traditional Awadhi spices, Gosht Tarqaliyan – mutton in onion cashewnut traditional Awadhi gravy, Mahi Galawat ke Kebabs – melt in the mouth fish kebabs, Taranumi Paneer – cottage cheese stuffed with pomegranate and nuts steeped in gravy and Awadhi Gosht Biryani. Appease your taste buds with sweet delights like Sheer Biranj, Seviyon Ka Muzzafar and Shahi Tukda.

Dishing out ethnic Awadhi cuisine for 15 years, Janaab Sabir Ali said, “Drawing inspiration from my father’s culinary expeditions, has enabled me to curate authentic recipes. I wish to bring to the table flavours which will reacquaint our guests with the hidden treasures of Awadhi delicacies.”

PS. Post the event, despite of us having left without trying the desserts, the team from Taj Land´s end made sure to send us a sampler of the same to our office the next day.
