Enjoying these lovely Super Chewy Chocolate Chip Cookies… Yum!

If you have been following my blog, you will know that I have baked numerous types of chocolate chip cookies. And I do know a lot about my cookies and care a lot about the details of my bakes. In fact, I was so obsessed with my baking that I was thinking a lot while munching these yummy super chewy cookies.
I asked myself….
Have I tried baking all of the chewy chocolate chip cookies that I can find?
Not all but I have been diligent enough to discover at least 5 really good basic chewy chocolate chip cookies. Basic because these recipes contain really basic ingredients such as butter, caster sugar, brown sugar and wheat flour. Not even oats or other additions are required to make them extra chewy. And the recipes are:
- Super Chewy Chocolate Chip Cookies baked in this post, originated from Food Network at HERE
- Perfect Chewy Chocolate Chip Cookies baked at HERE, originated from Cook’s Illustrated and very similar to Toll House Chocolate Chip Cookies at Epicurious

- The Big Chewy Chocolate Chip Cookies baked at HERE, originated from an Alton Brown recipe from Food Network
- The Best Chewy Chocolate Chip Cookies baked at HERE, originated from a Donna Hay recipe from Epicurious
- Epicurious Favourite Chocolate Chip Cookies baked at HERE, originated from Epicurious
Plus, I have also tried a Chewy Chocolate Chip Cookies from Food Network at HERE but it didn’t work very well for me which is pretty strange as most chocolate chip cookies recipes are usually fail-proof. For my bake, the cookies expanded a lot, chewy, edible but just looking very ugly!!! LOL!!!

A chewy chocolate chip cookies recipe that didn't work perfectly well for me.


More "cookies" questions for me to answer…
Are these super chewy cookies better than the rest of the chewy cookies that I have baked?
Does the use of the low protein cake flour or the high protein bread flour make the cookies chewier? Which flour is better?
Which recipe is the chewiest that I have baked?
To my questions, I first normalise all of these chewy chocolate chip cookies recipes to contain 120g butter:

Based on the table, you see that the best ranked most chewy chocolate chip cookies that I have ever baked is The Best Chewy Chocolate Chip Cookies, Donna Hay recipe from Epicurious at HERE. From the table, I can clearly see why they are the chewiest... It is due to their larger size, smaller surface area and the second highest amount of sugar added. Hey, baking is science, man! LOL!!!
The next best chewy chocolate chip cookies are the thin and medium-sizes Epicurious Favourite Chocolate Chip Cookies at HERE. They contain the highest amount of sugar but due to their larger surface area and thinner body, they are slightly less chewier.
The 3rd chewy chocolate chip cookies are actually the ugly cookies that expanded too much after baking! LOL!!! Its chewy texture somehow reminds me of the "Worst" Chocolate Chip Cookies that I have baked at HERE. I didn't include the worst cookies in this comparison because they contain maple syrup which might potentially made the cookies chewier. When I looked at its composition closely, it is actually quite similar to the perfect chewy chocolate chip cookies at HERE and the super chewy chocolate chip cookies that I baked in this post. And I'm very surprise that an accumulation of such many little differences from everything can create such significant difference, resulting these cookies looking so ugly eventually, yet with a chewier texture. Due to its ugliness, I would not recommend using this recipe.
The equally 4th chewy cookies are the super chewy chocolate chip cookies baked in this post and also the perfect chocolate chip cookies but the perfect chocolate chip cookies contain slightly lesser sugar and so they are crispy and chewy when freshly baked whereas the super chewy are purely chewy to the extent of being a little sticky throughout, never crispy at all. Is the sticky texture due to the use of the less protein cake flour in these super chewy cookies? Honestly, I don’t know but I do know the best thing about this firm and easy-to-handle cookie dough is that it is the best chewy cookies recipe that can hold the most amount of chocolate chips!
The 5th chewy yet highly highly highly recommended recipe is the big chewy that was originated from Alton Brown at HERE. They are made with the least amount of sugar and can hold a lot of chocolate chips. Double yay!!! Plus, they are the most crispy chewy chocolate chip cookies… very very very delicious but only when freshly baked, not on the next day. Unfortunately too, these cookies are the best when they are baked in this mega size! And they have to be baked with the high protein bread flour too.

By the way, there is this healthy honey chocolate chip cookies at here that claimed that these cookies are chewy… I tried baking the cookies with no liquid Stevia and also a little more chocolate chip... They are cakey, NOT CHEWY!!!

Here's the recipe is adapted from Food Network

Makes about 25 medium cookies
120g unsalted butter, softened at room temperature
100g (1/2 cup) dark or light muscovado sugar or brown sugar
85g (1/4 cup plus 3 1/2 tbsp) caster sugar
1 large egg yolk, 17g
1 1/2 large egg white, 50g
2/3 tsp vanilla paste or extract
225g (1 1/2 cup) cake flour with 8% protein
2/3 tsp baking soda
2/3 tsp salt
240g (1 cup plus 4 tbsp) chocolate chips, plus extra to top if desired (I used Callebaut dark chocolate callet with 54% cocoa)
Preheat oven at 190°C / 375°F. Line baking trays with baking papers
Using a wooden spoon or an electric mixer with paddle attachment, beat butter and both sugar in a large mixing bowl until combined and fluffy, 3–4 mins. Add egg yolk and white bit by bit and beat well after each addition. Add vanilla and beat until combined.
Combine flour, baking soda and salt. Sift the flour mixture into the butter mixture. Use a spoon or spatula to mix until all ingredients are incorporated. Stir in chocolate chips.
Divide dough 30g each by weight and arrange on the prepared trays with about 3-4 cm apart. Please note that the cookies will spread during baking. Top with extra chocolate chips if desired. Bake at 10 mins, swapping the trays around halfway through baking. Do not over-bake cookies. Allow cookies to cool on baking tray for about 15 mins to set, then transfer onto wire racks to cool slightly or completely.
Store cookies in an airtight container at room temperature for up to 1 week.
